Abstract

Dyes are substances intended to impart or enhance color to food products. One of the environmental factors influencing the health of modern people is the quality of food. Violation of the quality and balance of nutrients in the diet of a modern person changes metabolism, reduces adaptive capabilities, disrupts normal weight indicators, and the presence of various synthetic food additives - dyes E100 - E199 leads to an increase in cases of food allergies and respiratory diseases.
